Asian Inspired Dinner

Versatile Soy-Miso Dressing

Yield: ~1.5 cups (12 servings)

Ingredients:
  • 2 tbs. water
  • 3 tbs. Shiro Shinshu Miso paste*
  • 3 tbs. rice vinegar
  • 3 tsp. sesame oil 
  • 1/2 tsp. soy sauce
  • 2 tbs. chopped ginger
  • 1 large clove chopped garlic
  • 1/2 cup silken tofu
  • Pinch of chilli flakes (or to taste)
* You can purchase Shiro Shinshu Miso paste at your local Asian market.  It may also be called white miso.


Method:
  • Blend all ingredients together until smooth.  We used a Hamilton Beach Pulsation, but any Magic Bullet type device would work fine.

Crispy Tofu 
Yield: 4 servings






Ingredients:
  • 1 350g package Extra Firm Tofu
  • 1.5 tbs. sesame oil
  • 3 tsp. soy sauce
  • Pinch of chilli flakes (or to taste)

Method:
  • Pre-heat oven to 450 degrees F.  Line a cookie sheet with tinfoil.
  • Cut tofu in half, lengthwise ("hotdog style").
  • Wrap tofu in paper towel and place under a heavy object (e.g., cutting board).  Let sit for ~30 min.
  • Cut tofu into even-sized (~1-inch) cubes.
  • Toss tofu in sesame oil, soy sauce, and chilli flakes.  Place onto the prepared, un-greased cookie sheet.
  • Bake for 25-30 min, or until golden brown.  Turn tofu half-way through cooking.
  • Serve over a simple salad with Versatile Soy-Miso Dressing.

Sesame Panko-Crusted Green Beans
Yield: 4 servings






Ingredients:
  • 300 g raw green beans
Wet Mix:
  • 2 egg whites
  • 1 small white onion, diced
  • 2.5 tbs. Shiro Shinshu Miso paste*
  • 1 tbs. Sriracha 
  • 1 large clove garlic
  • 1/2 tsp. sesame oil
Dry Mix:
  • 3/4 cup Panko 
  • 1/4 cup sesame seeds
* You can purchase Shiro Shinshu Miso paste at your local Asian market.  It may also be called white miso.

Method:
  • Pre-heat oven to 450 degrees F.  Line a cookie sheet with tinfoil; lightly coat with vegetable oil.
  • Blend all "Wet Mix" ingredients together until smooth.  We used a Hamilton Beach Pulsation, but any Magic Bullet type device would work fine. Place blended "Wet Mix" ingredients into a small, shallow dish (big enough to fit the length of a green bean). 
  • Mix "Dry Mix" ingredients into a small dish (big enough to fit the length of a green bean).
  • Position the "Dry Mix" and "Wet Mix" next to each other in an assembly line, with the prepared cookie sheet nearby.
  • Working with one green bean at a time, dip in the wet mix and then roll in the dry mix to coat.  Place on the prepared baking sheet, leaving a small amount of room between each.
  • Roast the beans 15-20 min, or until lightly browned.  
  • Serve with the Versatile Soy-Miso Dressing as a dipping sauce.
